Ingredients

  • 1 large head garlic

  • 2 teaspoons Dijon mustard
  • 2 teaspoons Worcestershire sauce
  • 1 tablespoon freshly squeezed lemon juice
  • 1 teaspoon lemon zest
  • 1/2 teaspoon sea salt
  • 1/2 teaspoon freshly ground black pepper
  • 1 teaspoon honey (optional, for balance)
  • 1/2 cup (120g) mayonnaise
  • 1/4 cup (60g) Greek yogurt or sour cream
  • 3 tablespoons milk (or more, to thin as desired)

Instructions

    Preheat your oven to 200°C (400°F). Slice the top off the head of garlic to expose the cloves, drizzle with olive oil, wrap in foil, and roast for 35-40 minutes until soft and golden. Let cool slightly.

    Squeeze the roasted garlic cloves from their skins into the Thermomix bowl.

    Add 3 tablespoons milk. Blend for 10 seconds / Speed 4, checking consistency. Add more milk, 1 tablespoon at a time, and blend if you prefer a thinner dressing.

    Taste and adjust seasoning if needed. Blend again for 5 seconds / Speed 4 to ensure smoothness.

    Transfer to a clean jar or container. Chill for at least 30 minutes before serving for best flavor.
