Ingredients
- •1 large head garlic
- •1 tablespoon olive oil
- •1/2 cup (50g) finely grated Parmesan cheese
- •2 anchovy fillets (or 2 teaspoons anchovy paste)
- •2 teaspoons Dijon mustard
- •2 teaspoons Worcestershire sauce
- •1 tablespoon freshly squeezed lemon juice
- •1 teaspoon lemon zest
- •1/2 teaspoon sea salt
- •1/2 teaspoon freshly ground black pepper
- •1 teaspoon honey (optional, for balance)
- •1/2 cup (120g) mayonnaise
- •1/4 cup (60g) Greek yogurt or sour cream
- •3 tablespoons milk (or more, to thin as desired)
Instructions
- 1
Preheat your oven to 200°C (400°F). Slice the top off the head of garlic to expose the cloves, drizzle with olive oil, wrap in foil, and roast for 35-40 minutes until soft and golden. Let cool slightly.
- 2
Squeeze the roasted garlic cloves from their skins into the Thermomix bowl.
- 3
Add Parmesan cheese, anchovy fillets (or paste), Dijon mustard, Worcestershire sauce, lemon juice, lemon zest, salt, pepper, and honey (if using) to the bowl.
- 4
Blend for 10 seconds / Speed 6 to break down and combine.
- 5
Add mayonnaise and Greek yogurt (or sour cream). Blend for 10 seconds / Speed 6. Scrape down the sides.
- 6
Add 3 tablespoons milk. Blend for 10 seconds / Speed 4, checking consistency. Add more milk, 1 tablespoon at a time, and blend if you prefer a thinner dressing.
- 7
Taste and adjust seasoning if needed. Blend again for 5 seconds / Speed 4 to ensure smoothness.
- 8
Transfer to a clean jar or container. Chill for at least 30 minutes before serving for best flavor.
Tips & Variations
Pro Tips
- • For an extra silky dressing, blend for an additional 10 seconds at Speed 8.
- • If you love a cheesier flavor, add a tablespoon more Parmesan.
- • Letting the dressing chill for at least 30 minutes deepens the flavor.
- • If you don’t have anchovies, substitute with 1 teaspoon capers for brininess.
- • Roast several heads of garlic at once and freeze extras for future batches.
Storage
- • Refrigerator: Up to 1-2 weeks in airtight container
- • Freezer: Up to 3 months (thaw overnight in fridge)
- • Best Practice: Store in glass jars for longer freshness
Recipe Variations
- • For a dairy-free version, use vegan mayonnaise and omit Parmesan or use a vegan hard cheese.
- • Make it lighter by swapping Greek yogurt for all the mayonnaise.
- • Add a small handful of fresh parsley or chives for a herby twist.
