Ingredients

  • •1 large head garlic
  • •2 teaspoons olive oil
  • •120g (1/2 cup) Greek yogurt
  • •120g (1/2 cup) mayonnaise
  • •50g (1/4 cup) buttermilk (or milk)
  • •2 tablespoons fresh lemon juice
  • •1 tablespoon Dijon mustard
  • •1 tablespoon fresh chives, chopped
  • •1 tablespoon fresh parsley, chopped
  • •1 tablespoon fresh dill, chopped
  • •1 teaspoon honey
  • •1/2 teaspoon sea salt (plus more to taste)
  • •1/4 teaspoon black pepper

Instructions

  1. 1

Preheat your oven to 200°C (400°F). Slice the top off the head of garlic to expose the cloves. Drizzle with olive oil, wrap in foil, and roast for 30-35 minutes until the cloves are golden and soft. Cool slightly.

  2. 2

Squeeze the roasted garlic cloves from their skins into the Thermomix bowl.

  3. 3

Add Greek yogurt, mayonnaise, buttermilk, lemon juice, Dijon mustard, honey, salt, and pepper to the bowl.

  4. 4

Blend for 10 seconds / Speed 6. Scrape down the sides.

  5. 5

    Add chives, parsley, and dill.

  6. 6

Blend for a further 5 seconds / Speed 4 to combine, keeping some herb flecks visible for texture.

  7. 7

Taste and adjust seasoning as needed.

  8. 8

Transfer to a jar or airtight container. Chill for at least 1 hour before serving for flavors to develop.

Tips & Variations

Pro Tips

  • • For an extra-creamy texture, use full-fat Greek yogurt and mayonnaise.
  • • Let the dressing chill for at least 1 hour—the flavor deepens and the texture thickens.
  • • Use a mix of fresh herbs for best flavor, but dried can work in a pinch (use 1/3 the amount).
  • • If you prefer a thinner dressing, add a splash more buttermilk or milk.
  • • Roast garlic in advance and store in the fridge to speed up prep time.

Storage

  • • Refrigerator: Up to 1-2 weeks in airtight container
  • • Freezer: Up to 3 months (thaw overnight in fridge)
  • • Best Practice: Store in glass jars for longer freshness

Recipe Variations

  • • For a tangier dressing, swap buttermilk for sour cream and increase lemon juice to 3 tablespoons.
  • • Add 2 anchovy fillets or 1 tablespoon grated parmesan for a Caesar-style twist.
  • • Blend in 1 small avocado for a richer, green-hued version (try this with our Thermomix Creamy Avocado Cilantro Lime Dressing too).

Frequently Asked Questions

Can I use store-bought roasted garlic?

Yes, if you're short on time, store-bought roasted garlic can be used. Use about 1 tablespoon per head of garlic.

How long does this dressing keep?

Stored in an airtight container in the fridge, it will keep for up to 1 week. Give it a good shake before using.

Can I freeze this dressing?

Freezing is not recommended as the creamy base may separate, but you can freeze roasted garlic ahead for convenience. For more tips, see Freezing Sauces 101.

Is there a vegan version?

Yes! Substitute the Greek yogurt and mayonnaise for your favorite plant-based alternatives and use unsweetened plant milk in place of buttermilk.
