Ingredients

  • 3 large poblano peppers
  • 1 small yellow onion, quartered
  • 3 cloves garlic, peeled
  • 2 tablespoons olive oil
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon black pepper
  • 1/2 cup sour cream (or Greek yogurt)
  • 1/3 cup mayonnaise
  • 1 tablespoon fresh lime juice
  • 1/4 cup fresh cilantro leaves
  • 1/4 teaspoon ground cumin

Instructions

    Preheat oven broiler to high. Place poblanos, onion, and garlic on a baking tray. Drizzle with 1 tablespoon olive oil and season with 1/4 teaspoon salt. Broil for 8-10 minutes, turning poblanos occasionally, until skins are blistered and vegetables are softened.

    Transfer roasted poblanos to a bowl and cover with plastic wrap. Let steam for 10 minutes to loosen skins.

    Peel the poblanos, remove stems and seeds, and roughly chop. Discard skins, stems, and seeds.

    Add roasted poblano flesh, onion, garlic, and any juices from the tray to the Thermomix bowl.

    Add remaining 1 tablespoon olive oil, remaining salt and pepper, sour cream, mayonnaise, lime juice, cilantro, and cumin to the Thermomix.

    Blend 30 seconds / speed 6, scrape down the sides.

    Blend again 30 seconds / speed 8, until smooth and creamy. Taste and adjust seasoning if needed.
